Métabisulphite de sodium, also known as sodium metabisulfite, is a versatile food ingredient that is commonly used as a preservative and antioxidant. It is a white, crystalline powder with a slightly bitter taste and a strong odor. Sodium metabisulfite is soluble in water and is often added to foods and beverages to prevent spoilage and oxidation. It can also be used as a bleaching agent and dough conditioner in baked goods. While generally recognized as safe by regulatory agencies, sodium metabisulfite may cause allergic reactions in some individuals.
