It is a white, odorless, and tasteless powder that is soluble in water and other polar solvents. Methylcellulose is widely used in the food industry as a thickener, stabilizer, and emulsifier. It is especially popular in vegan and vegetarian cuisine as a plant-based alternative to animal-derived ingredients like gelatin. Methylcellulose has the unique property of gelling when heated, which makes it ideal for creating vegan meat substitutes and other plant-based foods.
