Nankeen, also known as "khaki" or "earth colour", is a type of flour made from ground yellow split peas. Its subtle nutty flavor and pale yellow color make it a versatile ingredient that can be used in both sweet and savory dishes. Nankeen is commonly used in Southeast Asian and Indian cuisine to make snacks such as chakli, murukku, and sev. It is also used in baking to add a unique texture and taste to bread and biscuits. High in protein, nankeen is a nutritious gluten-free alternative to wheat flour.
