So, what is nata?
Nata, also known as "crema de leche" or milk skin, is a delicate and creamy byproduct of heated milk. This light-colored film forms on the surface when milk is heated, cooled and allowed to rest. The texture of nata is similar to clotted cream, but it has a subtle sweet flavor with hints of caramel. It's commonly used in pastries and desserts in Latin American, Spanish and Filipino cuisine. Nata adds a unique richness to cakes, custards and flans, and pairs well with tropical fruits such as mango and pineapple.
