So, what is pimaricine?
Pimaricine, also known as natamycin, is a naturally occurring antifungal compound produced by Streptomyces natalensis. It has a broad spectrum of activity against yeasts and molds, making it a popular food preservative. Pimaricine is commonly used in the production of cheeses, meats, and baked goods to prevent spoilage and extend shelf life. It is also used in the treatment of fungal infections in humans and animals. Despite its potent antifungal properties, pimaricine is considered safe for consumption and has been approved for use by the US Food and Drug Administration (FDA) and the European Union (EU).
