Potassium bitartrate, also known as cream of tartar, is a white crystalline powder that is commonly used in baking as a leavening agent. It is a natural byproduct of wine-making, formed during the fermentation process of grapes. Potassium bitartrate is often added to recipes for its ability to stabilize and increase the volume of whipped egg whites, creating a light and fluffy texture in cakes, meringues, and soufflés. In addition to its culinary uses, potassium bitartrate is also used in some medicinal products as a laxative and in skincare products as an exfoliant.
