So, what is pullulan?
Pullulan is a natural, water-soluble polysaccharide that is produced by the fermentation of starch using the fungus Aureobasidium pullulans. This versatile ingredient is commonly used in the food industry as a thickener, binder, and stabilizer due to its excellent film-forming and adhesive properties. It is also used in dietary supplements and pharmaceuticals as a capsule coating or as a sustained-release agent. Pullulan is considered a high-quality alternative to synthetic polymers due to its biodegradability, non-toxicity, and non-allergenic properties, making it an ideal ingredient for health-conscious consumers.
