So, what is xanthan-gum?
Xanthan gum is a natural food ingredient derived from the fermentation of sugars by a bacterium called Xanthomonas campestris. It is commonly used as a thickening agent in foods and beverages due to its ability to create a stable and uniform texture. Xanthan gum can also be used to improve the shelf life and quality of gluten-free baked goods by providing structure and preventing crumbling. It is a popular ingredient in many commercial products, such as salad dressings, sauces, and ice cream, as well as in home cooking and baking. Xanthan gum is gluten-free and considered safe for consumption by the FDA.
