So, what is quitte?
The quince, or "quitte" in French, is a versatile fruit with a distinct floral aroma and tart flavor. Its tough, fuzzy skin gives way to a firm, pale-yellow flesh that turns rosy when cooked. High in fiber and vitamin C, quinces are often used in jams, jellies, and chutneys, where their natural pectin content helps set the mixture. They are also delicious baked into tarts or roasted alongside savory meats. Although less commonly eaten raw due to their astringency, quinces add a unique complexity to any dish they grace.
