So, what is rocou?
Rocou, also known as annatto, is a natural food coloring and flavoring agent derived from the seeds of the achiote tree. The seeds are typically ground into a powder or steeped in oil to create a vibrant red-orange color that's commonly used in Latin American, Caribbean, and Filipino cuisines. In addition to its coloring properties, rocou has a slightly sweet and nutty flavor, making it a popular ingredient in dishes like rice, stews, and sauces. The spice is also said to have medicinal properties and has been used in traditional medicine to treat a variety of ailments, including fever, diarrhea, and indigestion.
