Ruisrouhe is a Finnish whole-grain rye flour made by coarsely grinding the entire rye berry, including the bran and germ. This process results in a hearty, nutrient-rich flour with a distinct earthy flavor and a dense texture. Ruisrouhe is commonly used in traditional Finnish bread recipes such as "limppu" and "rieska", and is also a popular ingredient in savory pastries and porridges. Due to its high fiber content and low glycemic index, ruisrouhe is considered a healthy alternative to wheat flour and is often used in gluten-free baking.
