So, what is saindoux?
Saindoux, also known as rendered pork fat or lard, is a versatile ingredient commonly used in French cuisine. This creamy, white fat has a mild, savory flavor and can be used for frying, baking, and as a substitute for butter or oil in cooking. Saindoux adds richness and depth to dishes, and its high smoke point makes it ideal for high-heat cooking methods like sautéing and deep-frying. While often associated with decadent, indulgent dishes, saindoux can also be used in more health-conscious recipes as a replacement for less healthy oils and fats.
