Serum de lait en poudre, also known as powdered milk serum, is a high-protein, low-fat dairy ingredient that is derived from milk. It is obtained by separating the liquid part of milk from the curd during the cheese-making process. The resulting liquid, which contains proteins, lactose, and minerals, is then spray-dried to create a fine powder. With a slightly sweet and slightly salty taste, powdered milk serum is commonly used as a functional ingredient in a wide range of food applications, including dairy products, bakery, confectionery, and meat products. It is also a popular ingredient in sports nutrition and infant formulas due to its high protein content and easy digestibility.
