So, what is sodium acid carbonate?

Sodium acid carbonate, also known as sodium hydrogen carbonate, is a white crystalline powder that is commonly used as a leavening agent in baking. When combined with an acidic ingredient, such as vinegar or lemon juice, it produces carbon dioxide gas, which helps baked goods rise and become light and fluffy. Sodium acid carbonate is also used in the food industry as a buffering agent, which helps to regulate pH levels and prevent spoilage. It is considered safe for consumption in small amounts, but excessive intake may cause digestive discomfort or other adverse effects.
