It is produced synthetically by bubbling sulfur dioxide gas through an aqueous solution of sodium carbonate or sodium hydroxide. This chemical reaction yields a crystalline powder composed entirely of mineral and inorganic elements.
On ingredient labels, sodium bisulfite E222 frequently appears in alcoholic beverages such as wine and cider, as well as fruit juices, dried fruits, preserved vegetables, and processed potato products to inhibit microbial spoilage and prevent discoloration. It is also used in some commercial baked goods to condition dough.
