So, what is sodium hexametaphosphate?
Sodium hexametaphosphate is a white crystalline powder commonly used as a food additive for its ability to act as a sequestrant, emulsifier, and thickening agent. It is made up of a chain of six phosphate units bonded together, and is often added to processed foods such as meat, cheese, and canned goods to improve texture, prevent spoilage, and increase shelf life. Despite its chemical-sounding name, sodium hexametaphosphate is generally recognized as safe by regulatory agencies, and is considered an important ingredient in many food manufacturing processes.
