Potassium sorbate is generally recognized as safe (GRAS) by the U.S. Food and Drug Administration (FDA) and is widely used in the food industry to preserve a wide range of foods, including baked goods, cheese, meats, and beverages. It is also used in the production of wine and beer to prevent spoilage. Potassium sorbate has a slightly bitter taste but is generally considered to be safe for consumption at low levels.
