Potassium sorbate, or "сорбат калия" in Russian, is a common food preservative that is used to prevent the growth of mold, yeast, and bacteria in food products. It is a white crystalline powder that is derived from sorbic acid, which occurs naturally in some fruits and berries. Potassium sorbate is generally recognized as safe (GRAS) by the U.S. Food and Drug Administration (FDA) and is widely used in the food industry to preserve a wide range of foods, including baked goods, cheese, meats, and beverages. It is also used in the production of wine and beer to prevent spoilage. Potassium sorbate has a slightly bitter taste but is generally considered to be safe for consumption at low levels.
