So, what is cultures bacteriennes?
Cultures bactériennes, or bacterial cultures, are live microorganisms used in the food industry to ferment and preserve various types of foods. These cultures are made up of different strains of bacteria, each with unique properties that help create a particular flavor, texture, or aroma in the food product. Commonly used in the production of yogurt, cheese, sauerkraut, kimchi, and other fermented foods, cultures bactériennes help break down sugars and other compounds in the food, producing lactic acid, which acts as a natural preservative. As a result, foods that are fermented with bacterial cultures have a longer shelf life and offer a range of health benefits, including improved digestion and immune function.
