So, what is des ferment lactiques?
"Des ferment lactiques" is a French term that refers to lactic acid bacteria used as a starter culture in food fermentation. These friendly microorganisms convert lactose in dairy products into lactic acid, which acts as a natural preservative and gives a tangy flavor and creamy texture to yogurt, cheese, and other fermented foods. Some common strains of des ferment lactiques include Lactobacillus bulgaricus, Streptococcus thermophilus, and Lactococcus lactis. These bacteria not only enhance the flavor and nutritional value of dairy products but also provide numerous health benefits, such as improving digestion, boosting immunity, and preventing infections.
