Ferment lactiques, or lactic acid bacteria, are a group of microorganisms that play a vital role in the fermentation of various food products. These beneficial bacteria are commonly used in the production of yogurt, cheese, sauerkraut, pickles, and other fermented foods. They work by converting lactose and other sugars into lactic acid, which not only gives these foods their characteristic tangy flavor but also helps to preserve them.
