This process turns liquid oils into solid fats, making them more stable and giving them a longer shelf life. Fully hydrogenated vegetable fats have a high melting point, making them suitable for use in baked goods and confectionery products. However, they are also high in saturated fats, which can increase the risk of heart disease when consumed in excess. As such, they should be used in moderation as part of a balanced diet.
