So, what is acide érythorbique?
Acide érythorbique, also known as erythorbic acid, is a food ingredient commonly used as a preservative in the food industry. It is a white or slightly yellow crystalline powder that is water-soluble and odorless. Acide érythorbique is derived from sugar and is chemically similar to vitamin C, which means it also has antioxidant properties. It is often used in meat products, such as sausages and cured meats, to prevent discoloration and spoilage. Unlike other preservatives, acide érythorbique is considered safe and is even approved for use in organic foods.
