So, what is älginato de sodio?
Sodium alginate, or "älginato de sodio" in Spanish, is a natural polysaccharide extracted from brown seaweeds. It is commonly used as a thickening, gelling, and stabilizing agent in the food industry due to its ability to form gels in the presence of calcium ions. Sodium alginate is also widely utilized in culinary applications, particularly in molecular gastronomy, where it can be used to create unique textural effects and encapsulate flavors. Additionally, it is considered safe for consumption and has no discernible flavor, making it an ideal ingredient for both sweet and savory dishes.
