So, what is amidon hydroxypropylé?
Amidon hydroxypropylé, also known as hydroxypropyl starch, is a modified starch commonly used as a food ingredient to improve texture, viscosity, and stability in various products. It is derived from corn, potato, or tapioca starch and chemically modified by adding hydroxypropyl groups to the starch molecule. This modification enhances its solubility, water-binding capacity, and resistance to heat, acid, and shear. Hydroxypropyl starch is widely used in processed foods such as soups, sauces, dressings, bakery products, and dairy products. It is a versatile ingredient that can provide different functional properties depending on the degree of modification and the source of starch.
