"De E621" is a food ingredient commonly known as monosodium glutamate (MSG), a flavor enhancer used in many cuisines around the world. It is derived from glutamic acid, an amino acid naturally found in many foods such as meat, fish, and vegetables. MSG is known for its umami taste, which adds depth and richness to savory dishes. Despite its controversial reputation, scientific research suggests that MSG is safe to consume in moderate amounts for most people.
