So, what is ammonia?

It is composed of nitrogen and hydrogen atoms and is commonly used as a cleaning agent and in the production of fertilizers, textiles, and plastics. As a food ingredient, ammonia is sometimes added to baked goods as a leavening agent to help them rise. It is also used in some meat products as a processing aid to help control the growth of bacteria and improve texture. However, the use of ammonia in food has been controversial, with some critics concerned about its potential health effects.
