So, what is ammonium aluminum sulphate?
Ammonium aluminum sulphate is a white crystalline powder commonly used as a food additive. Also known as ammonium alum or ammonia alum, it is a double salt composed of ammonium sulfate and aluminum sulfate. It is primarily used as a leavening agent in baked goods, such as cakes, biscuits, and breads. Ammonium aluminum sulphate reacts with alkaline substances to produce carbon dioxide gas, which causes the dough to rise and gives baked goods a light and fluffy texture. It is also used in the production of pickles and as a firming agent in cheeses and puddings. However, excessive consumption of ammonium aluminum sulphate may have adverse health effects, such as digestive issues and kidney damage.
