So, what is ammónium-karbonát?
Ammonium carbonate, also known as baker's ammonia or hartshorn, is a food ingredient commonly used as a leavening agent in baked goods. It is a white powder with a strong odor similar to ammonia. When heated, it releases carbon dioxide gas, which causes dough and batter to rise. Unlike other leavening agents such as baking powder or baking soda, ammonium carbonate does not leave a residual flavor in the finished product. However, it should be used with caution as its fumes can be harmful and it can cause irritation when handled improperly.
