So, what is carbonates d ammonium?
Ammonium carbonates, also known as baker's ammonia or hartshorn, are a type of white crystalline powder commonly used as a leavening agent in baking. Unlike baking soda and baking powder, ammonium carbonate produces gas quickly at low temperatures, making it ideal for delicate baked goods such as cookies and crackers. It has a distinct odor that dissipates during baking and leaves no residual taste. Ammonium carbonate is a traditional ingredient in European and Scandinavian baked goods, but it has largely been replaced by modern chemical leaveners in other parts of the world.
