So, what is bicarbonate d' ammonium?
Bicarbonate d'ammonium is a white crystalline powder that is commonly used as a leavening agent in baked goods. It releases carbon dioxide gas when it is heated, which causes the dough or batter to rise and become lighter and fluffier. Unlike baking soda, bicarbonate d'ammonium has a more neutral taste and does not leave a chemical aftertaste. It is often used in traditional European recipes for cookies, biscuits, and other baked treats. However, it should be used sparingly since overuse can result in a bitter taste and an ammonia smell.
