So, what is calcium ferrocyanide?
Calcium ferrocyanide is a food-grade additive commonly used in the production of canned fruits and vegetables. It is a salt made up of calcium, iron, carbon, nitrogen, and cyanide ions. This ingredient is colorless and odorless, with no discernible taste. Its main function is to prevent discoloration and extend shelf life by reducing the amount of oxygen available in the can. Calcium ferrocyanide has been deemed safe for consumption by regulatory agencies worldwide, as long as it is used within acceptable limits.
