So, what is calcium guanylate?
Calcium guanylate is a flavor enhancer commonly used in the food industry. It is a white, odorless powder that is water-soluble and easily mixes with other ingredients. Calcium guanylate is produced by fermenting tapioca starch with the bacteria, Bacillus subtilis. It works synergistically with other flavor enhancers, such as monosodium glutamate (MSG), to create a savory taste known as umami. Calcium guanylate is often added to soups, sauces, snacks, and processed meats to enhance their flavor and increase their appeal to consumers. It is generally recognized as safe (GRAS) by the FDA and is a vegetarian and vegan-friendly ingredient.
