It is used as a flavor enhancer in the food industry, especially in processed foods and instant noodles, to improve taste and impart a savory or umami flavor. Inosinic acid works by stimulating the taste receptors on the tongue, enhancing the perception of salty and savory flavors. It is generally recognized as safe by regulatory agencies, but excessive intake may cause health problems in susceptible individuals.
