So, what is callos de vacuno?
Callos de vacuno is a traditional Spanish dish that consists of stewed beef tripe in a rich and flavorful sauce. Tripe, which is the stomach lining of cows, has a unique texture and flavor that is enhanced by slow-cooking with chorizo, morcilla (blood sausage), tomato, onion, garlic, paprika, and other aromatic herbs and spices. The resulting dish is hearty, savory, and slightly spicy, making it perfect for colder months or as a comforting home-cooked meal.
