So, what is carbonates de ammonium?
Ammonium carbonates are a food ingredient that is commonly used in the baking industry as a leavening agent. These carbonates are a mixture of two salts - ammonium bicarbonate and ammonium carbamate - that release carbon dioxide gas when heated. This gas causes the dough or batter to rise, resulting in a light and fluffy texture. Ammonium carbonates are also used in some traditional European baked goods like gingerbread and biscuits. However, due to their strong ammonia smell and potential health risks, their use is now limited in many countries.
