So, what is carbonates sodium?

Sodium carbonates, also known as soda ash or washing soda, are highly versatile food ingredients. These white, odorless, and alkaline compounds are often used as a food additive to regulate acidity levels, as well as a leavening agent in baked goods. Sodium carbonates can also act as a stabilizer and thickener in food products such as ice cream and custards. They are naturally occurring compounds found in mineral springs, although they are often manufactured synthetically for commercial use. Sodium carbonates are considered safe for consumption by regulatory bodies such as the FDA.
