It reacts with acidic ingredients like cream of tartar or lemon juice to produce carbon dioxide gas, which helps dough or batter rise and become light and fluffy. It has a slightly salty taste and is often used in recipes for baked goods such as cakes, cookies, and biscuits. Sodium acid carbonate is also used in the production of effervescent tablets, where it serves as a source of carbon dioxide gas when dissolved in water.
