So, what is datem?
Datem, short for diacetyl tartaric acid esters of mono and diglycerides, is a food emulsifier commonly used in bakery products, margarine, and other processed foods. It is derived from natural vegetable sources such as soybeans and palm oil, and is a white to yellowish powder with a slightly sweet taste. Datem improves dough stability, texture, and crumb structure in baked goods, as well as increasing shelf life and reducing the need for preservatives. It is a versatile ingredient that can be used in a variety of food applications and is generally considered safe for consumption by regulatory authorities.
