So, what is de livèche?
De livèche, also known as lovage, is a highly aromatic and flavorful herb that is native to the Mediterranean region. Its flavor is similar to celery but more intense and complex, with hints of anise and parsley. The plant grows up to six feet tall and has dark green, serrated leaves and small yellow flowers that bloom in the summer. De livèche is commonly used in French and Mediterranean cuisine to flavor soups, stews, and sauces. It also pairs well with fish, poultry, and root vegetables. In addition to its culinary uses, de livèche has a long history of medicinal use and is believed to have digestive, diuretic, and anti-inflammatory properties.
