So, what is diacétate sodium?

Diacétate sodium is a food ingredient that serves as a preservative, flavor enhancer and acidity regulator. It is derived from acetic acid and sodium carbonate through a chemical reaction that forms a white crystalline powder with a slightly salty taste. Diacétate sodium is commonly used in processed meat, poultry, seafood and dairy products to prevent bacterial growth and extend shelf life. In addition, it can impart a tangy flavor to foods and adjust their pH level to improve texture and stability. Despite its benefits, diacétate sodium should be consumed in moderation, as excessive intake may pose health risks.
