So, what is disodium pyrophosphate?
Disodium pyrophosphate is a food ingredient commonly used as a leavening agent, buffering agent, and emulsifier in a variety of processed foods. It is a white, odorless, and crystalline powder that is highly soluble in water. Its molecular formula is Na2H2P2O7, and it is derived from phosphoric acid. Disodium pyrophosphate helps to increase the volume and texture of baked goods, prevent discoloration of processed meats, and enhance the stability of processed cheese. Although it is generally considered safe for consumption, excessive intake may cause gastrointestinal disturbances in some individuals.
