So, what is e140?
E140 is the European food additive code for chlorophylls and chlorophyllins, which are natural green pigments found in plants and algae. Commercially, E140 is produced by solvent extraction from green plant matter, most commonly grass, alfalfa, nettles, or spinach. Manufacturers process these raw plant extracts using solvents like ethanol or acetone to isolate the pigment, and they may chemically modify them into water-soluble chlorophyllin salts through alkaline hydrolysis.
This additive functions primarily as a natural coloring agent to restore or enhance green hues in processed foods. It commonly appears on labels for confectionery, chewing gum, pasta, baked goods, sauces, dessert mixes, and beverages.
E140 is vegan because it is derived entirely from plant materials. The industrial processing methods rely strictly on chemical, mineral, and botanical inputs, ensuring that no animals or animal-derived byproducts are involved at any stage of its manufacture.
We've built a vegan ingredients scanner that classifies food ingredients as "vegan", "non-vegan", or "potentially vegan".
It allows you to avoid non-vegan ingredients - just take a picture of a product's ingredient list, and the app tells you if the product is vegan or not.
