E141ii is the food additive code for copper complexes of chlorophyllins, a semi-synthetic green coloring agent. It is produced by extracting natural chlorophyll from edible plants, most commonly alfalfa, nettles, or fescue grass. The extracted chlorophyll undergoes a chemical process known as saponification to remove the phytol ester, making it water-soluble, after which the central magnesium ion is replaced with copper to create a heat- and light-stable pigment.

This color additive is used across a wide variety of processed foods and beverages to enhance or restore green coloration. Manufacturers frequently include it in ingredient formulations for confectionery, chewing gum, jellies, dairy alternatives, baked goods, preserves, and flavored drinks.
