So, what is e1451?
E1451 is the European additive code for acetylated oxidized starch, a modified starch used as a food texturizer and stabilizer. It is produced by treating native plant starch, typically extracted from corn, potatoes, wheat, or tapioca, with oxidizing agents such as sodium hypochlorite, followed by esterification with acetic anhydride. This chemical modification improves the starch's binding capacity, paste clarity, and stability during heating and freezing.
Food manufacturers primarily utilize acetylated oxidized starch as a thickening and gelling agent. It commonly appears on ingredient lists for confectionery items such as gummy sweets and jellies, as well as in processed foods like canned soups, gravies, salad dressings, and bakery fillings.
E1451 is vegan because its primary base is derived entirely from plants, and the chemical agents used to modify it are of mineral or synthetic origin. Animal-derived ingredients, byproducts, and processing aids are not utilized in the production of this additive, making it suitable for a vegan diet.
