So, what is e327?

E327 is the European food additive code for calcium lactate, a salt derived from lactic acid and calcium. Despite the name sharing a linguistic root with lactose, commercial calcium lactate is produced by the bacterial fermentation of plant-based carbohydrates such as cornstarch, beet sugar, or molasses. The resulting lactic acid is then neutralized with a mineral base, typically calcium carbonate or calcium hydroxide, to yield calcium lactate.

Food manufacturers use E327 as a firming agent, acidity regulator, and calcium fortifier. It frequently appears on ingredient labels for canned fruits and vegetables, baking powder, fruit preserves, confectionery, carbonated beverages, and sugar-free chewing gum.

E327 is vegan because the manufacturing process relies entirely on microbial fermentation, plant carbohydrates, and mineral compounds. It does not contain milk proteins or lactose, and no animal-derived raw materials or processing aids are involved in its standard industrial production.
