So, what is e325?
E325 is the European food additive code for sodium lactate, the sodium salt of lactic acid. It functions primarily as a preservative, acidity regulator, and humectant that helps foods retain moisture. Manufacturers typically add it to baked goods, confectionery, processed plant-based meats, dressings, and ready-to-eat meals.
Sodium lactate is produced by neutralizing lactic acid with sodium hydroxide. The lactic acid used in this process is made commercially through the bacterial fermentation of carbohydrates, which are sourced from plant sugars like corn starch, sugar beets, or sugarcane.
E325 is considered vegan because it is derived entirely from plant carbohydrates, microbial fermentation, and mineral sources with no animal inputs. Despite the phonetic similarity between the terms lactate and lactose, commercial sodium lactate involves no dairy derivatives or animal byproducts, making it fully suitable for vegans.
We've built a vegan ingredients scanner that classifies food ingredients as "vegan", "non-vegan", or "potentially vegan".
It allows you to avoid non-vegan ingredients - just take a picture of a product's ingredient list, and the app tells you if the product is vegan or not.
