Polyglycerol polyricinoleate (PGPR) is an emulsifier made by combining castor oil with glycerol. This food ingredient is commonly used in chocolate production to reduce the viscosity of chocolate and make it easier to mold. PGPR improves the texture and consistency of chocolate while also extending its shelf life. Additionally, it can reduce the amount of cocoa butter required in chocolate production, making it a cost-effective alternative. PGPR is considered safe for human consumption and is approved by the Food and Drug Administration (FDA) for use in food products.
