E574, also known as gluconic acid, is a food ingredient commonly used as an acidity regulator and flavor enhancer. It is a natural organic acid that is produced through the fermentation of glucose by certain bacteria. E574 has a slightly sweet taste and is often added to foods such as canned fruits and vegetables, soft drinks, and processed meats. It is also used in cosmetics and personal care products as a skin conditioning agent. Despite its association with processed foods, E574 is generally considered safe for consumption in small amounts according to regulatory agencies.
