So, what is enzymes coagulante microbienne?
Enzymes coagulante microbienne is a natural food ingredient that is commonly used in cheese-making. This microbial coagulant is produced by fermenting certain microorganisms, such as Rhizomucor miehei and Endothia parasitica. It works by breaking down milk proteins, causing them to clump together and form curds, which are then used to make cheese. Unlike animal-based rennet, enzymes coagulante microbienne is vegetarian-friendly and does not require the killing of animals. This ingredient is also used in the production of other dairy products like yogurt and sour cream.
