So, what is extrait de lévure?
Extrait de levure, or yeast extract, is a natural ingredient derived from yeast cells through a process of autolysis, where the yeast cells are broken down by their own enzymes. It is commonly used as a flavor enhancer in food products due to its rich umami taste. It contains a range of amino acids, peptides, and nucleotides, which not only add flavor but also offer nutritional benefits. Extrait de levure is also a popular vegan alternative to monosodium glutamate (MSG), as it imparts a similar savory taste without the use of animal products.
